Quinoa Fried Rice

Meatless recipe but loaded with protein and trust me, you’ll love every bite of this yummy fried rice.

—-Quinoa Fried Rice—-

Course: Main course

Serves: 2

Cooking Time: 30 mins
INGREDIENTS

  1. Quinoa- 1 cup
  2. Shredded carrots- 1 cup
  3. Finely chopped onion- 1/2 cup
  4. Garlic chopped- 1 tbsp.
  5. Chopped ginger- 1 tsp
  6. Cooked green peas- 1/2 cup
  7. Cooked black beans- 1/2 cup
  8. Salt- 2 tsps.
  9. Turmeric powder(optional)- 1 tsp
  10. Pepper powder- 1 tsp
  11. Water- 2 cups
  12. Lemon- 1/2
  13. Olive oil- 2 tbsps.

METHOD

  1. Add 1 cup quinoa to 2 cups water with a drop of oil in a medium saucepan.
  2. Bring to a boil.
  3. Cover, reduce heat to low and simmer until quinoa is tender about 15 minutes.
  4. Drain the excess water.
  5. To make veg stir-fry, in a pan heat some olive oil.
  6. Sauté garlic, onions, and ginger with a tsp of salt.
  7. Add some turmeric powder and shredded carrots and sauté well till they are almost cooked and onions turn light brown.
  8. Now add the black beans and green peas into this with some pepper.
  9. You can add some mixed spices according to your taste.
  10. Check salt in between.
  11. Once the veg mixture is cooked add the quinoa into this with a squeeze of half lemon and mix well.
  12. Serve hot !!
