A healthy and beautiful way to start your mornings. Vanilla yogurt layered with pomegranate and blueberry purees. One of my favorite and easiest breakfast packed with vitamins, antioxidants and proteins.

—-Blueberry Pomegranate Yogurt Parfait—-

Course: Snack/Breakfast

Yield: 2 servings

Cooking time:10 mins
INGREDIENTS

  1. Low-fat Vanilla yogurt/coconut yogurt+1 tsp honey – 1 1/2 cup
  2. Blueberries(fresh/frozen)-1 cup
  3. Pomegranates-1 cup
  4. Honey/maple syrup-2-3 tbsp.
  5. Fresh or frozen berries and pomegranates- for topping

DIRECTIONS

  • Blend the blueberries with 1 tbsp. honey and set aside. Repeat the same with pomegranates and 1 tbsp. honey.
  • In a serving glass, layer vanilla yogurt with the pomegranate puree and blueberry puree. Top with fresh or frozen blueberries and pomegranates.
  • You can also add granola or chopped nuts in your parfait.
  • Enjoy cold!
